The Spartak cake recipe includes honey-chocolate cakes and one of the cream options: custard, sour cream, etc. There is no exact information about where the name of this delicacy came from, but there are several basic options for its preparation. Spartak's recipe cannot be called complicated, but some rules must be followed:

  1. If you cool the dough a little, the cakes will not stick while rolling.
  2. Do not add too much flour while kneading the dough. Adjust the consistency so that the mixture does not stick to the rolling pin or your hands.
  3. Before rolling out the shortcakes, sprinkle the rolling pin and dough with flour.
  4. For a cake, the cream should be thick, it should not flow down the sides and top.
  5. When using custard, add softened butter in advance.

  • cocoa – 4 tbsp. l.;
  • egg – 2 pcs.;
  • soda – 1 tsp;
  • sugar – 200 g;
  • butter – 100 g;

For the glaze

  • cocoa – 3 tablespoons;
  • water – 8 tbsp. l.;
  • sugar – 5 tbsp. l.;
  • butter – 50 g.

For fondant

  • vanillin – 1 sachet;
  • milk – ½ l;
  • sugar – 150 grams;
  • egg yolk – 3 pcs.;
  • flour - 3 tbsp. l.;
  • butter – 200 g.

  1. To create the cakes, add beaten eggs, honey, softened butter, sugar, and cocoa to a convenient container. Mix the ingredients, place on low heat, stirring constantly. After the sugar has dissolved, add soda to make the mass increase in volume.
  2. Keep the pan on the fire for 8 minutes, then remove, add flour, stir the contents.
  3. Sprinkle the work area with flour, lay out the dough, and knead it. The consistency of the mass should be similar to plasticine: a little sticky, elastic, soft.
  4. Roll the dough into a rope, cut it into 10 pieces, roll each piece out rectangular shape. You should not put them in the refrigerator for a long time, because then it will be extremely difficult to roll them out. To get the perfect shape of the cake, you need to take a sheet of paper, attach it to the dough and trim the edges along the sheet.

  1. First combine honey, sugar, butter. Melt the mixture in a water bath, then add the melted egg, mix thoroughly and continue heating.
  2. Pour soda into the mixture, do not bring the mixture to a boil, stir the contents regularly.
  3. You need to heat it for about 5 minutes, foam should form. When it appears, you can remove it from the water bath.
  4. Next add flour (necessarily sifted) and a spoonful of baking powder. To ensure that the cakes for Spartak turn out correctly, do not add all the flour at once, add 1 cup at a time, then mix thoroughly.
  5. Cocoa is added next to the cake batter. Stir the mixture until smooth, gradually adding flour.

  3. Be sure to stir the mixture until all components are completely dissolved.

  4. Separately, beat 2 eggs and add them to the melted butter-honey mixture.

  5. Pour 4 grams of soda into the pan, stir and cook over moderate heat for 8-10 minutes.

  6. Pour the resulting liquid mixture into the flour and knead the dough.

    It will turn out sticky, but under no circumstances should you add flour.



  7. Leave the dough for 12-15 minutes. After this, it will become like plasticine and will be easy to work with.

  8. Divide the finished dough into 8 parts, cover with film and place in the refrigerator for 45-50 minutes.

  9. Dust the table with 10 grams of flour and roll out the dough on it into thin layers.

For a very long time I was going to make this wonderful cake, but I thought that it was complicated and I was not yet ready for such a process. However, after studying the recipe carefully, I saw that there was nothing particularly complicated. I decided to cook it. The Spartak cake turns out very tasty. Especially if you thoroughly soak it with cream (this will make it even more tender). I highly recommend baking such a cake, leaving behind all fears that it won’t work out.

To prepare the crust dough for the classic Spartak cake, we will need the following ingredients: flour, honey, butter, sugar, soda, baking powder, eggs and cocoa.

Beat eggs with sugar, add honey and soft butter. Place the mixture in a water bath and stir with a whisk for 7 minutes. Add baking soda to the mixture and stir until foam appears.

Add baking powder and cocoa to the mixture, stir, sift the flour in parts, stirring all the time.

You should get a soft dough. It should be placed in the refrigerator for 1 hour, placing the dough in a plastic bag.

Prepare ingredients for making cream: flour, milk, butter, eggs and condensed milk.

Beat the eggs in a ladle, add flour and some of the milk, stir well. Gradually pour in the rest of the milk.

Then pour in the condensed milk, put the ladle on the fire and, without ceasing to stir the mixture, brew the cream. The cream should be quite thick.


When the cream has cooled to room temperature, beat the butter in a food processor, gradually pour in all the custard and beat until smooth.

Now you can start rolling out the cakes. Divide the dough into 8 pieces and roll each piece very thinly on parchment. You can roll out all the cakes at once by cutting off 8 sheets of parchment, or you can roll out 4 sheets and, while they bake one by one, roll out the rest. The choice is yours.

Bake the cakes in an oven preheated to 180 degrees for about 5 minutes for each cake. Place the cakes in a stack.

Trim the cakes to one size (mine are 22 cm). Save the cut pieces for sprinkling the cake. Grease each cake with cream.

Place the cakes one by one on a plate, grease each with cream and prepared cream. Also grease the sides of the cake with cream.

Pour the cream into the ladle, heat it and add the chocolate pieces. After a minute, stir the chocolate into the cream until a glossy mass is obtained.

Spread chocolate icing over the top and sides of the cake.

Sprinkle the sides of the cake with crushed crumbs left over from trimming the cake layers and decorate as desired. The classic Spartak cake must soak overnight in the refrigerator.

The cake is given a special taste by the delicate cream prepared with condensed milk. The result is very tasty cake, well soaked, with rich chocolate and honey layers.

To prepare the cream, in a deep bowl, carefully grind 2 eggs with flour (130 g). Then condensed (1 can) and whole milk (220 ml) are poured here. The bowl with the ingredients is placed in a water bath and with constant stirring the cream is brought to a thick consistency. While the cream is cooling, in a separate bowl, beat the butter (200 g) with a mixer until it becomes fluffy. Gradually cooled custard is introduced into the creamy mass.

All cakes (except the top one) are coated with freshly prepared cream. The top of the cake is covered with glaze made from melted chocolate (150 g) and 10% fat cream (120 ml). Before eating, the cake should be soaked in the refrigerator for at least 8 hours.

Recipe for Spartak cake with custard

It is with custard that the Spartak cake is most often prepared. Thanks to the delicate texture of the cream and butter in the composition, the product is well soaked within 5 hours.

The Spartak cake is prepared according to the classic recipe in the following sequence:

  1. 1 egg is driven into a deep bowl, sugar (150 g), margarine (150 g) is added, and then milk is poured (2 tablespoons), soda (1 teaspoon) and liquid honey (3 tablespoons) are added. The dishes are placed in a water bath and with constant stirring the mass heats up and increases at least 2 times, becomes fluffy and light.
  2. The dishes are removed from the water bath, cocoa (50 g) and flour (400 g) are added to the dough. The dough will be soft at first, but as it cools it will become more elastic and firm. It needs to be divided into five parts, roll out each of them and bake the cakes.
  3. To prepare the cream, you need to grind the yolks (3 pieces) with sugar (150 g) and starch (40 g). Pour in hot milk (500 ml), stir and put the pan on the fire. Stirring constantly, cook the cream until it reaches a thick consistency. Cover the cream with cling film until it cools.
  4. Beat butter (250 g) with powdered sugar (40 g), then literally add the cooled cream one spoon at a time.
  5. Grease each cake except the top one with cream. Decorate the product with chocolate glaze on top.

Recipe for Spartak cake with sour cream

This cake turns out incredibly tender thanks to the use of sour cream and yogurt cream. And if the dough for the “Spartak” cake according to the classic recipe is prepared as for “Medovik” only with the addition of cocoa, then in this case currant jam is also added to it.

To prepare the dough, eggs (6 pieces) and sugar (500 g) are mixed in a water bath, margarine (100 g), jam (220 g) and soda (2 teaspoons) are added. Then the mixture is removed from the heat, cocoa (200 g) and flour (0.8-1 kg) are added. You should get an elastic dough. It is divided into 8 parts. Each ball is rolled out into a layer 4 mm thick and baked until ready for 5 minutes.

The cream is prepared from sour cream with a fat content of 25% (600 g), yogurt (100 ml), powdered sugar (200 ml) and starch (1 tablespoon). All ingredients are thoroughly beaten with a mixer until a thick consistency is obtained.

Before assembling the cake, the cake layers are soaked in pre-prepared instant coffee. After that, cream is applied to them, and the top of the cake is covered with chocolate glaze.

Cake "Spartak" without honey

People who are allergic to honey can be asked to bake the following cake. To prepare the dough, first of all, 1 beaten egg, 50 g of butter, milk (7 tablespoons) and 250 g of sugar are heated in a water bath. The hot mass is removed from the heat, after which cocoa (4 tablespoons), soda (1 teaspoon) and flour (400 g) are added to it. You can bake as many as 6 or 7 cakes from this easy-to-work, elastic dough.

Cake "Spartak" can be prepared at home with any cream, for example, custard or sour cream. It also turns out very tasty with butter cream. To do this, cream with a fat content of 30% is whipped with a mixer with sugar (150 g). The resulting cream is spread over all the cake layers, and the top of the product is covered with chocolate glaze.
