Pie with jam and cottage cheese from yeast dough in the oven

The larger the pie with jam and curd filling, the more joy there is in the house. Following this simple worldly wisdom, I propose to bake a delicious pie with cottage cheese and apricot jam, the size of a baking sheet, in your gas oven in the kitchen stove. This yeast dough recipe has been passed down from generation to generation, and it never fails. Thanks to sour cream, which is included in the list of products, the yeast dough does not go stale for a long time, does not crumble and simply melts in the mouth.

For yeast dough:

400 ml. warm milk;

50 gr. yeast;

400 gr. Sahara;

2 gr. vanilla;

3 tbsp. spoons of sour cream;

1.5 kg flour;

100 ml. sunflower oil (in the dough and for greasing the baking sheet).

For the filling we use 500 grams of cottage cheese mixed with a glass of sugar and one or two eggs.

Lubricate the top layer with jam or jam, it is best to use apricot, it has no small seeds and has a wonderful sweet and sour taste that goes wonderfully with baked goods.

Yeast dough pie with jam and cottage cheese in the oven, recipe with photos step by step:

Pour 400 ml of warm milk into a large bowl, crumble 50 grams of yeast, add 2 tbsp. spoons of sugar and a glass of sifted premium flour. We leave it all to ferment for 20-25 minutes.



In another bowl, beat: 3 eggs, 400 grams of sugar, 2 grams of vanilla, 3 tbsp. spoons of sour cream.


We begin to knead the dough, gradually pouring the sifted flour into the dough. When the dough reaches the viscosity of dumplings, add the beaten egg mixture, knead well, and add flour again.


In total, 1.5 - 1.7 kg of flour should be used. When the dough has the desired homogeneous consistency, clean your hands and add 50 ml of sunflower oil, after which, mix the finished dough well again.

Sprinkle flour on top and cover the dough with a towel. Place the bowl in a warm place for at least two hours.

During this time the dough will rise well.


Roll out the first part of the dough to the size of a baking sheet. Grease the baking sheet itself with sunflower oil, drain off the remaining oil so that the dough does not move along the greased surface and edges. Transfer the dough to a baking sheet. This process requires some skill, so the baking sheet should not be far from you. If the dough still stretches a little, gently pull it up and spread it evenly over the entire baking sheet, making the edges like a mold.


Spread with curd filling. Roll out the second part of the dough and place it on top.

Spread with apricot jam.


Roll out a third of the dough and cut into thin strips.

Decorate the surface of the pie with stripes. Leave for 10-15 minutes so that the cake rises a little. At this time, turn on and preheat the gas oven to 250 degrees.


In a bowl, beat one small egg with vanilla (on the tip of a knife), and brush it over the pastry strip decoration using a brush.


Place the pie with jam made from yeast dough in the oven. After 5 min. Reduce the heat so that the temperature drops to 200 degrees. And leave for another 45 minutes.

To prepare the dough we will need the following ingredients:

Cottage cheese - 0.5 kg
Eggs - 3 pcs
Sugar - 200g
Margarine - 350 g
Vanillin - a pinch
Flour - approximately 3.5 cups
Thick jam - 250-300g
Soda. quenched with vinegar or lemon juice - 0.5 teaspoon. spoons
Powdered sugar - 1 tablespoon

Grind the sugar with the eggs until the sugar disappears completely. grains.

Melt the margarine in a water bath, add vanillin to the cottage cheese, stir, beat the eggs and sugar until smooth.

Combine all ingredients, including cottage cheese, mix well.

Gradually introduce flour with soda, quenched with acid. The dough should not stick to your hands and be elastic.

Mix the dough. Let's form it into something like a loaf.

Wrap the finished dough in cling film and put it in the refrigerator. I usually make this dough the night before. and bake it the next day. That's what I'm doing this time too.

We take our dough out of the refrigerator and cut it into two parts. Put one third of the dough aside, and roll out most of it into a layer no less than 0.8 cm thick. Grease a baking sheet with oil, sprinkle with oatmeal and place the rolled out dough on it. cover generously with jam. The remaining ones

Today I want to treat you to pies made from cottage cheese dough with cottage cheese. Yes, it’s butter, but believe me, it’s very tasty. Recipes for pies made from curd dough, there are different recipes, for example without eggs, but mine with eggs and baking powder. It is advisable to take pureed cottage cheese. If you have dry cottage cheese, then it is better to grind it in a meat grinder and add a couple of spoons of sour cream.

So let's get started. We'll need it.

Mix cottage cheese, eggs, sugar, salt, baking powder

This is the mass they should be. Add oil and stir again.

Gradually add flour and knead the dough. Place the dough in the refrigerator for 30 minutes.

While the dough is resting, make the fillings. Add raisins, sugar and yolk to the cottage cheese, mix everything well. And I also had homemade apple jam. If you want to use a non-sweet filling, then you do not need to add sugar to the dough.

So, the dough is ready, let's make pies. I divide the dough into 3-4 parts, take one part and roll it into a rope. I cut it into small pieces, preferably identical ones. Roll out the flatbread and add the filling.

We prepare a pie filled with jam () in the same way. Grease the pies with yolk. Place in the oven preheated to 180 degrees for 30 minutes.

    My mold has a diameter of 30 by 20 cm.
    We level the dough into shape and make sides.

  • Step 6

    We spread the filling, I use apricot jam,
    distribute it throughout the dough.

  • Step 7

    Roll out a small piece of dough into a layer
    and cut into strips 1 centimeter wide.
    We lay the strips on top of the jam, imitating a checkered pattern.

  • Step 8

    We cut the pie in the corners, wrap it and connect all the edges.
    Coat the top with beaten egg.

  • Step 9

    We bake a pie.

    Place in a preheated oven at 180 degrees
    and bake for 25-30 minutes.
    Take the finished cake out of the mold
    and sprinkle with powdered sugar if desired.

    It is advisable to let the pie cool slightly so that the filling does not leak out.
    Slice and serve, the pie turns out very tender and tasty
