The first thing I decided to cook after a week's break was baked zucchini breaded with breadcrumbs and grated cheese.

The dish is simple, quick to prepare, and very tasty while it’s hot. After cooling, it’s also tasty, but the breading becomes damp and the crust becomes less crispy.

All you need is:

  • 2-3 young zucchini or regular zucchini;
  • half a glass of breadcrumbs;
  • 1-2 cloves of garlic;
  • a pinch of dry herb mixture (Italian herbs);
  • salt, ground black pepper to taste;
  • a little vegetable or olive oil;
  • 2 eggs;
  • 80-100 g hard cheese (I used Parmesan).

We have a ton of zucchini on the market these days, so appetizing that they ask: “Take me, my friend, and bake me in the oven, I’ll be crispy and juicy...” They’re tempting, in a word.

I washed them, dried them, and first cut them into plates about 1.5 cm thick.

And then in cubes.

Grate the cheese on a fine grater; the finer it is, the better it will stick to the zucchini sticks.
